This is one of my favorite things to make! If you eat without pasta, it is super healthy. You blend it in a blender which makes a creamy consistency, without adding any cream.
1 can diced tomatoes
4 cups chicken broth
1 medium yellow onion, chopped
2 cloves garlic, minced
1 tsp sugar
1/4 cup tomato paste
5 large basil leaves
1 tbsp olive oil
ground black pepper
1 cup small shell pasta, cooked al dente
In a large sauce pot heat olive oil over medium heat. Saute onions, garlic and black pepper for about 10 minutes. Add tomatoes and cook for another 10 minutes.
Add broth, tomato paste and sugar, then simmer for another 10 minutes.
Remove from heat, add basil leaves and allow to cool for 15 minutes.
In batches puree soup in a blender, then return to heat on stove. Add cooked pasta to soup and serve.
