Shrimp Pasta with Tomato & Broccoli

Great quick meal with lots of yummy, different flavors.



Ingredients:

½ cup sun dried tomatoes, packed with out oil

½ cup boiling water

3 cups uncooked bowtie pasta

1 ½ cups chopped broccoli (steamed until crisp-tender)

Cooking Spray

2 garlic cloves, minced

1 pound large shrimp, peeled and deveined

½ cup fat free chicken broth

4 oz low fat cream cheese

½ tsp dried basil

1/3 cup grated Parmesan cheese

4 tsps fresh lemon juice


Prep sun-dried tomatoes- place in boiling water, cover and let sit for 30 minutes, drain and chop.

Cook pasta as directed, drain.

Heat large non-stick skillet over medium heat, spray with cooking spray.

Add garlic to the pan for 1 minute.

Add shrimp and cook 3 minutes.

Add broth and cream cheese, stirring to combine, bring to boil.

Reduce heat and simmer for 2 minutes.

Add tomatoes, broccoli, and basil, stir well.

Stir in pasta, Parmesan cheese and lemon juice, cook for 2 minutes.
