This is a family tradition for me, I grew up eating every Easter Sunday, and now I carry the tradition and make it every year.
2 lbs whole milk Ricotta cheese
1 cup sugar
1/4 cup cooked white rice
4 eggs
ground nutmeg
1 1/2 cups half & half
2 frozen premade pie crusts
This recipe makes 2 pies.
Put ricotta in a bowl and beat until fluffy. Add the eggs and sugar, and beat until creamy also. Then add rice and cream and continue beating.
Poor into uncooked pie crusts and sprinkle with nutmeg on top.
Bake at 400 degrees for 15 minutes, then cover crusts with foil so they don't burn. (or use a fancy pie crust protector) Then bake at 350 degrees for 30 minutes.
