Ricotta Cookies

This is a family recipe passed down from someone I am not even sure. My mom used to make these every year and I now carry the tradition every Christmas.



1/2 cup butter, melted and cooled

2 cups sugar

2 eggs

4 cups flour

1 tsp baking powder

1 tsp baking soda

1 cup whole milk ricotta cheese

2 tsp vanilla extract


Mix in a large bowl- butter, ricotta, vanilla, eggs and sugar. Then mix in flour, baking powder and baking soda. At first it will look dry, but wait about 3 minutes and then finish mixing- the dough will moisten.


Drop onto an ungreased cookie sheet using spoon, about 1 to 1 1/2 inch loose balls. Sprinkle with colored sugar sprinkles of your choice. I usually do some red, some green and leave some plain.


Bake 12-15 minutes at 350 degrees, don't let golden, they taste far better if still all white. Trust me, they are cooked through. They just won't be dry!


Cool on cooling rack to get them off the hot pan.


Store in a ziploc bag or airtight container in refrigerator. Makes 3-4 dozen cookies.
