I am proud to say this is my nephews recipe! (well my sister Julie and his) He is an amazing chef in New Hampshire, and this is the best vodka sauce I have ever had! Just the right amount of vodka taste and the Italian sausage is a perfect addition to a normally meatless recipe.
Ingredients:
6 garlic cloves, minced
2 tbsp olive oil
¾ small onion, diced or minced
1 lb hot Italian sausage, bulk
28oz can crushed tomatoes
10 leaves fresh basil, chopped
1 tbsp sugar
½ cup vodka
½ cup heavy cream
1 lb pasta, penne is best
Olive oil, to taste
Salt and pepper, to taste
In a large sauté pan cook garlic and onion in 2 tbsp olive oil for 3 minutes over medium heat. Add sausage and sauté until fully cooked, breaking up with wooden spoon. Season with salt and pepper. Add the crushed tomatoes and simmer at low heat for 10 minutes. Add basil, sugar and vodka and cook for 5 minutes, vodka will reduce and cook off. Add heavy cream and cook for 3 minutes. Add cooked pasta (al dente) to the sauce in the pan and coat. Drizzle with a little bit of olive oil and season with extra salt and pepper to taste.
