Surprising twist and its delicious!
3-4 large ripe avocados
1/2 small red onion, diced
1/2 to 1 fresh serrano chile, seeded and finely chopped
2 tbsp fresh cilantro, chopped (omit if you don't like, I only put a pinch)
2-3 tbsps fresh squeezed lime juice
1 medium ripe mango, peeled, flesh cut from the pit and diced
Remove flesh from avocados into a large bowl. Coarsely mash the avocado with a large fork or potato masher. Add into the bowl onion, serrano, cilantro and lime juice. Season with salt and pepper.
Mix in 2/3 of mango. If not using immediately, cover with plastic pressed directly on the surface of the guacamole and refrigerate- preferably no more than a few hours.
When you are ready to serve, scoop dip into a bowl and garnish with remaining mango cubes and a few sprigs of cilantro.
