Perfect for a hot summer night! These are one of my favorites!
Ingredients:
1/4 cup fresh orange juice
2 tbsp fresh lime juice
2 tbsp sour cream
salt and pepper
1 tsp cayenne pepper
1/4 small cabbage, shredded
1 cup corn
1 diced jalapeno
1 tbsp olive oil
1lb peeled shrimp
flour taco size tortillas (about 8)
Whisk together juices, cream and seasonings. Add cabbage, corn and jalapeno and combine. Let sit for at least 10 minutes. Sauté shrimp (season as desired) in olive oil, 2-3 minutes.
Serve with tortillas and slaw!
