We made Chicken Adobo tonight and the house still smells of vinegar! You will love this Filipino recipe if you are a fan of the tangy taste of vinegar and the saltiness of soy sauce! I literally could drink the sauce!
Ingredients:
1 whole chicken (cut into eighths)
1 cup vinegar
1 cup soy sauce
2 bay leaves
4 greens onions, chopped
olive oil
fresh ground black pepper
granulated garlic to taste
Heat oil and add chicken and sauté until the chicken is beginning to tenderize.
Add ground black pepper, green onions, garlic, soy sauce, and vinegar, and let simmer for 25-35 minutes or until chicken is done.
Make sure to add more vinegar or soy sauce until it suits your taste (should be a bit tangy).
Serve chicken and sauce over white rice.
* For a quicker, easier version I just cook boneless skinless chicken thighs and they only take about 20 minutes to fully cook- and less bone and skin mess!
