Caprese Skewers

This is easy and elegant- a great appetizer for a summer party! I love to skewer things. You can buy the full size bamboo skewers and just cut them down to 1/2 size, or I have found at a local specialty store multiple size skewers for this type of thing.


Ingredients: 

1 plastic pint (clam shell packaging) of grape or cherry tomatoes

2 containers of fresh mozzarella balls, in water

1 bunch basil leaves

1/3 cup balsamic vinegar

4 tbsps extra virgin olive oil

Salt and Pepper, to taste

Skewer on bamboo skewers 1 tomato, basil leaf and 1 mozzarella ball. Stack up on a plate.

In a small saute pan bring the balsamic vinegar to a simmer. Let simmer for about 10 minutes- you will see that the vinegar will thicken and form a syrup. If you are a fan of balsamic, you will love this! It makes it yummy and sweet! Take the pan off the heat and let cool for about 10 minutes.


Drizzle olive oil over all the skewers and season with salt and pepper. Then drizzle with a spoon the balsamic glaze you made.


I suggest making these only 1-6 hours before you serve them- so everything stays nice and fresh.
